Cajeta is officially registered as an exclusive product from Celaya, Guanajuato

CELAYA, GUANAJUATO.- The Geographical Indication “Cajeta de Celaya,” which had already been published in the Official Gazette of the Federation, has been certified and protected by the Ministry of Economy through the Mexican Institute of Industrial Property and its Divisional Directorate of Trademarks.

This protection, which identifies the traditional Cajeta as an exclusive product from Celaya, prevents anyone from claiming to be selling Cajeta from that region if they do not meet the registration requirements.

The Cajeta made in the Guanajuato towns of Celaya, Apaseo el Grande, Juventino Rosas, Cortázar, and Villagrán is known by the official designation “Cajeta de Celaya.”

The following, as described in article 288 of the Federal Law for the Protection of Industrial Property, formally designates its components as Protected Geographical Indications.

  • A description of the final product or products, including information on their features, parts, method of extraction, and manufacturing or processing procedures.
  • The final product, called Cajeta, is made from goat’s milk that has a liquid and extremely thick consistency.

Before making a statement, Eduardo Knapp Hernández, director of economic development, said that it is wonderful news and that after a lengthy process, the Cajeta de Celaya finally has been certified.

Although it is not a designation of origin, this distinction shows that Celaya is where the traditional Cajeta is created, proving that no one else complies with the criteria set forth when the region was recognized.

Now comes the production phase, when a regulatory council will ensure that the procedures are followed, for the commercialization phase, which will involve working closely with the producers to position the product and secure its export.

Any small producer can obtain the badge by adhering to the corresponding instructions and regulations for the production processes.
