With the beginning of Lent, the sale of piloncillo tacos also arrived in this city, a San Miguel tradition that brings together families in front of the temple of San Juan de Dios to buy this local snack.
The vendors set up right in front of the temple and right there they bring their stove, their tables and their tortilla presses to prepare the tacos and the gorditas de pinole or gordas de anthillero, as they were previously known.

The ingredients to prepare the piloncillo tacos include: corn dough, cascabel chili sauce, oil and piloncillo.
To prepare them, make a small tortilla to which you add ground piloncillo, make the shape of a taco, then bathe it in cascabel chili sauce and pour hot oil.

The tradition of selling these tacos goes back generations and was only interrupted during the confinement due to the Covid-19 pandemic. Today they are completely valid and will be harvested throughout Lent from 10:00 in the morning in front of the temple of San Juan de Dios.
