Young San Miguel Chef will represent Mexico in the VIII World Tapas Championship

Jordi Casas, a chef who is only 23 years old, will represent Mexico in the VIII World Tapas Championship. His creativity and culinary skills have led him to this great achievement.

The young chef Jordi Casas, from San Miguel de Allende, won first place in the recent national tapas competition held in Querétaro. This triumph ensures him a direct pass to the VIII World Tapas Championship, which will take place on November 18 at the Millennium Dome. This event will have a jury headed by chef Oriol Castro, distinguished with 3 Michelin stars and 3 Repsol suns.

The career of a promising chef

Since he was 8 years old, Jordi has been immersed in the world of gastronomy, learning from his father, Joan Casas Rodeja, chef of the restaurant “El Asado Catalán”. At the age of 12, he began participating in Paella Festivals in Guanajuato, and by the age of 15, he was already competing in high-level culinary events. His passion and dedication have led him to compete alongside renowned chefs worldwide.

“My dad is my teacher, example and life guide,” said Jordi, who acknowledges that his father has been key in his culinary development.

Star creation: The “Chamuco” tapa

The tapa that earned him first place is called “Chamuco,” a creation that Jordi perfected for six months. This tapa represents a fake dynamite mounted on a traditional mask, inspired by the ceremonies and folklore of San Miguel de Allende.

The ingredients of the tapa include mulato chili, duck, mushrooms, mole, xoconostle, and chilcuague. The combination of these endemic elements of Guanajuato resulted in an “ash roll” that surprised the jury with an explosion of flavors.


Pride for Guanajuato
This championship represents a new opportunity for Guanajuato to shine in the culinary arena. In 2021, the state already stood out by winning first place with the tapa “Chile Ceremonial,” created by chef David Quevedo Olvera of Comonfort. Now, Jordi carries the torch, proving that Guanajuato’s gastronomy continues to gain recognition globally.

Jordi Casas is preparing to take his passion and talent to an international stage, hoping to leave an indelible mark on the World Tapas Championship.
