Mexico Gastronomic Guide, one of the most complete gastronomic listings in the country, chose San Miguel Allende’s “Áperi”, as one of the best restaurants in Mexico for 2017.
Fifty members of the “Editorial Council of Mexican Culinary Voters” (Consejo Editorial de Votantes de Culinaria Mexicana), made anonymous visits to different restaurants throughout the country.
These “mystery shoppers” evaluated the continuity of the gastronomic project, quality of service, the preparation of recipes and the correct use of culinary techniques.
The experts also evaluated the price-quality ratio, the impact that chefs or restaurateurs have on the sustainable development of traditional cuisines and how they encourage the creation of gastronomic communities in their environment, according to a statement by Mexico Gastronomic Guide.
The restaurant Áperi, belongs to Levain & Co., and is located within premises of Hotel Dos Casas & Spa.
Áperi, Latin for “open” perfectly describes the restaurant’s vision and concept, featuring a unique culinary experience; food for the senses, prepared with the region’s freshest ingredients and the passion that characterizes chef Matteo Salas.
