Behind San Miguel’s La Canica there is a bromance between Michelin-starred Madrileño Paco Roncero of Sublimotion, the world’s most expensive restaurant, and Guanajuatan chef Bricio Domínguez, over a passion for street food.
- Spanish tapas merged with Mexican cuisine are merged at Restaurante La Canica, the collaboration of Mexican Chef Dominguez Bricio and Spanish Chef Paco Roncero is just sublime.
Spanish Chef Paco Roncero has two Michelin stars and has served on the jury of Top Chef Master Chef program in Spain and in Colombia.
Chef Dominguez Bricio has several great successes behind him. Best known for the Garden of Miracles (El Jardín de los Milagros) in the city of Guanajuato.
Here they have turned antojitos into an art form, with Mexican-Spanish croquettes and chipotle aïoli and dorado ceviche served on marigold-strewn tables in the courtyard.
