“Guanajuato is the only state in the Mexican Republic that has its own public gastronomic policy, which was born as a result of the creation of the Guanajuato festival ¡Sí sabe! (It knows/it does taste!) in 2013″, state tourism secretary Fernando Olivera Rocha said in an interview with the newspaper el financiero.
“This is the result of over 200 years of gastronomic traditions in our state, and also of the recently awakened wine activity in the region. In addition, during the last 5 years more than 200 gastronomic events have taken place in 21 municipalities across the state”, continued the state tourism secretary.
A key element in this regard are the Traditional Cooks of Guanajuato. There is a record of more than 40 beneficiaries of thies program, who have documented more than 350 recipes between savory dishes, sweets and typical drinks.
An example of the Traditional Cooks of Guanajuato is María Consuelo, who explained that since the project began, participants have noticed a lot of support for their work not only to be showcased in other states, but also in other countries.
“For us, it is more than expecting an economic remuneration in exchange for our dishes, we are sharing with the rest of the world the recipes taught to us by our mothers or grandmothers with love,” María Consuelo added.
Gastronomy has brought a better quality of life for the people of Guanajuato, rescuing the Traditional Cuisine, as well as adding value to the endemic ingredients of the region.
Local producers of typical sweets made with ingredients from the region such as: xoconostle, strawberries, mezcal, wine, tequila, and liquors have been greatly benefited too.
In August 2016, the Tourism Secretariat of the State of Guanajuato obtained the 1st place in the State Public Sector category in the 13th National Competition of Cultural Tourism Traditional Cuisine “Tell me what you eat and I will tell you where you are from” (Dime lo que comes y te diré de donde eres), from SECTUR.
“Guanajuato is only missing a beach, but it has practically all the tourist attractions offered in the country. In recent years the traditional food of Guanajuato has become an icon and another tourist attraction, so much so that at tourism fairs we have taken the traditional food of Guanajuato and it has become an important tourist magnet,” said Olivera Rocha.
“The tourism impact in the gastronomic segment has increased by 109 percent. In addition, to date the state has become a benchmark in the sector both nationally and internationally”, the state tourism secretary concluded.
