Revistatravesias.com, a Mexican traveler magazine, recently published an article about Cervecería Dos Aves.
They visited the Premium Microbrewery of San Miguel de Allende and tried Dos Aves finest selection of beers.
The Mexican central region of el Bajío is not only producing wine and cars; small local breweries are starting to emerge here also, offering excellent beer. One of these is Cervecería Dos Aves, which was founded in 2012 and was the first craft brewery in San Miguel de Allende.
You can find its alchemic center just 10 minutes away from downtown on the way to Celaya. You can immediately feel that homebrewing atmosphere, but the brewery has mastered its production method to obtain a capacity of 800 gallons, or 26BBL, monthly of five different beer styles (plus one seasonal).
Its founders, Francisco Kameko and Mark Taylor, met when Francisco took home brewing classes from Mark at Cabrillo College, in Santa Cruz, California, about nine years ago. One afternoon, a pair of crows were poised on a tree and kept them company during the brew session, and hence their name (Dos Aves means Two Birds in Spanish).
Their passion for brewing eventually brought them to San Miguel de Allende to undertake what they call their “indie brewery”.
